Spicy Baby Calamari With Basil


Baby calamari cooked with squid ink was the most popular dish in my parents restaurant back in the early 1980s. However, for an international audience, I found that combining the squid ink with short grained rice and selected herbs made it more visually appealing while maintaining the overall flavour. The basil also imparts a wonderful aroma and bring balance to the dish.
