Pomelo Salad with Prawns & Chicken
This is another very Southern-influenced dish, due to its use of fruit in a salad. I learned
this recipe from my mother who spent her childhood in the South. Sweet segments
of pomelo, crispy country chicken and tender prawns, tossed with local herbs and a
tamarind dressing. Served with shallots and rice paper, I added crunchy toasted coconut
and a coconut creame dressing to add even more texture to the dish.
