Again a southern-influenced dish using semi-ripe mango, it would have originally made use of river trout in Vietnam – nomadic people would grill the whole fish over a fire in the fields. I personally love my food with more texture so I fry snapper which I fillet first so my customers don’t have to worry about the bones.
